Honey-Garlic Grilled Chicken

2 tbsp. oil
2 tbsp. fresh cilantro, chopped
1 tbsp. honey
1 tbsp. lime juice
2 cloves garlic, minced
1 tsp. salt
1/2 tsp. pepper/lemon pepper
4 boneless skinless chicken breast halves

1. Mix first seven ingredients.
2. Add chicken breasts, turning to coat.
3. Let chicken sit in marinade.
4. Grill over medium heat for 10 minutes (turning once), or until cooked through.

Choices

UPDATE: I see we had some confusion. Some of us voted for our top two favorites and some for just one. Oh well. I realize it's way late and I haven't voted yet (June 8th) so most of you have probably already started on your meals or at least planned them, but I just thought I'd throw in my vote anyway. :) Vacation threw me totally off and I forgot to vote. Sorry.

Candy Crunch Pudding Pie

2 cups cold milk
2 small pkg. instant chocolate pudding
1 tub (8 oz.) Cool Whip, divided
2 Heath candy bars (1.4 oz.each), chopped, divided (I used 3 of these-one extra for good measure!)
1 Oreo pie crust

Beat milk and dry pudding mixes until blended. Gently stir in half of the Cool Whip and all but 3 Tbsp. of the candy.

Spoon into crust.

Top with remaining Cool Whip and candy. Serve immediately or refrigerate until ready to serve! Super easy!! :)

Arizona Chicken Chili Recipe

3 Boneless Skinless Chicken Breasts
1 can DelMonte diced Tomatoes with Green Pepper & Onion
1 can Black Beans (drained)
1 can Corn (drained)
1 tbs. chili powder

Cook chicken in pan with tomatoes mixture and chili powder until cooked through and sauce begins to thicken. Add remaining ingredients and heat 5-7 minutes until warm. Garnish with green onions and mont. jack cheese if desired.

Chicken Taco Casserole

I got the recipe from here.

Chicken Tortilla Soup

In big pot or crockpot
1 lb chicken breast
1 onion
1 stick butter

Saute and add some garlic.

Add 48 oz of chicken broth
2 cans of chick peas
2 cans green chilis
2 cans of ranch style beans
2 cans drained red beans
2 cans chili beans
2 cans stewed tomatoes
2 TBS cumin
1 whole small chili powder seasoning mix (more or less for spiciness)
2 cans of corn

Let simmer. This makes a lot, I usually freeze about 3 freezer bags!
